Just a quick reminder that there will be no classes for the coming month as I head off on vacation.

All classes will resume again from 18th September.

NEW CLUBBERCISE CLASSES START AT HARTISMERE SCHOOL IN EYE TODAY

I’m back from my summer vacation and raring to go so come and join me this evening for some Clubbercise fitness and dance at Hartismere School in Eye, Suffolk.

The class is held in the Lines Studio in the main Building near the Reception entrance.

Clubbercise poster for HartismereClubbercise is an unique dance fitness exercise programme designed for 16+ and involves dancing in a Club like atmosphere to all of your favourite tunes. Participants groove to catchy club anthems in a darkened room with glow sticks and neon lights; but without the hangover, and without the heels!

A Clubbercise session can easily burn approximately 500 calories and is really like a “night out” instead of an exercise class! Glow sticks are provided in the first class, for a small additional cost.

SCHEDULE UPDATE – LAST CLASSES BEFORE THE SUMMER BREAK AND NEW CLUBBERCISE IN EYE COMING

 

Whether it’s Zumba, Aqua Zumba, Zumba Gold or my increasingly popular Clubbercise classes, there’s still time to shake that booty and get swimwear fit before you jet off for your summer holidays.

Final classes before my summer break will take place at the end of this month and the first week of August – full schedule below.

But I’ll be back and raring to go for classes again, starting 5th September. And I have some great news – I have a new Clubbercise class starting in Eye at Hartismere School. Whoo hoo!

Looking forward to seeing all my regulars soon and hope to welcome some newcomers too, so do spread the word my friends.

ZUMBA GOLD CLASSES TO START IN DEBENHAM IN MAY

zumba 1After confirming the launch dates for my new Clubbercise With Eileen classes in Stradbroke and Saxmundham earlier today – and announcing a new Zumba Gold class  at the Pennoyer Centre in Pulham Saint Mary last month – I am delighted to announce that I am launching a new weekly Zumba Gold class in Debenham.

The Debenham Zumba Gold classes will be held every Friday morning at 10-11am, starting 20 May 2016.

Classes will be held at the Debenham Sports & Leisure Centre.

Zumba Gold is designed for the active mature adult, the beginner or for those who may need special dance modifications in a fitness session.

The pace is not as “high energy” as a Basic Zumba Fitness class and has more comprehensive breakdowns of the fitness choreography.

It’s perfect for young mums who might have just given birth and want to ease back into exercise, or for those individuals who feel that they can’t keep up in a regular Zumba class.

CLUBBERCISE WITH EILEEN LAUNCH DATES FOR STRADBROKE AND SAXMUNDHAM

Instructor Profile picClubbercise With Eileen is all set to go – my weekly Clubbercise classes will kick off in Stradbroke and Saxmundham in the week beginning 16 May 2016.

Stradbroke High School – Monday 16 May, 7:45 – 8:45pm
Saxmundham Market (Town) Hall – Wednesday 18 May, 6:00 – 7:00 pm

Both classes will run weekly thereafter (not including bank holidays), although for Stradbroke classes will only run during term time.

Essentially, Clubbercise is a unique dance fitness exercise program. Participants groove to catchy Club anthems in a darkened room with glow sticks and neon lights. While you can easily burn approximately 500 calories at a Clubbercise class, it’s more like a “night out” than an exercise class and you don’t get a hangover or have to wear heels!

The class length is 45 minutes and includes a warm up and cool down.

Please make sure you bring a water bottle, towel and wear a supportative bra and good trainers. It’s always a good idea to wear layers if clothes which you can easily peel off (like a hoodie), if you get warm. There’s also a health fitness questionnaire to fill out, prior to class.

For our first class, admission is £10 (which includes the Glow Sticks). Admission then drops to is £6 for each class thereafter.

Salmon Mousse – the perfect starter for this Easter

Easter is here and so I thought I would share the recipe for my favourite appetiser, Salmon Mousse.  It’s perfect for entertaining large crowds of people. Whenever I serve this “very popular” salmon mousse, there’s always someone who wants the recipe. So here it is.  Below is a photograph to show you how to make this wonderful starter look even more appetizing.

Depending upon one’s dietary observances, if you are vegetarian or Vegan do be aware that this recipe does contain gelatine.

So here you go ….

Salmon MousseEquipment you need

  • Salmon or Shrimp Mold

Ingredients

  • 1 can/tin Condensed Soup-Cream of Tomato, 295G (I used Bachelor’s) – do not add water
  • 8 Ounces or 225G of Philadelphia cream cheese
  • 1 envelope unflavoured gelatine
  • ½ cup finely chopped celery
  • ½ cup finely chopped onion (white not spring)
  • ½ finely chopped green pepper
  • 1 cup Mayonnaise (I used Hellmann’s)
  • Dash of Worcestershire sauce
  • A squeeze of fresh lemon
  • For:  Salmon Mold-3 cans/tins 213G each Wild Alaskan Red Salmon, drained
  • Or:   Shrimp Mold-3 cans/tins small cooked shrimp, drained, about 4 ounces each (or equivalent)

Method

  1. Oil mold pan well with olive oil (I used a tin shaped like a lobster).
  2. Blend tomato soup and cream cheese in top section of double boiler pan. Stir until lumps dissolve.
  3. Mix in gelatine. Take off heat.
  4. When cool, add other ingredients.
  5. Pour into mold and chill in refrigerator (overnight is best).

To serve

  1. Unmold carefully using a bread knife to loosen up sides and/or briefly sitting in hot water.
  2. Place on large platter.  Decorate with celery, olives, cucumbers or lemon slices.
  3. Serve with Carrs’s Original Melts crackers, wheat biscuits or bread rounds. Recipe makes a little over 1 ½ pints.

New classes in Clubbercise and Zumba Gold

This unique dance fitness exercise program is designed for 16+ and involves dancing in a Club like atmosphere to all of your favourite tunes. Participants groove to catchy Club anthems in a darkened room with glow sticks and neon lights; but without the hangover, and without the heels!

A Clubbercise session can easily burn approximately 500 calories and is really like a “night out” instead of an exercise class! Glow sticks can inexpensively be purchased in class and are used all throughout the session.

I’ll be posting locations shortly so stay tuned! Classes are planned for a May 2016 launch and will cater for those living in and around Saxmundham, Framlingham and Eye. On the Zumba frontier; another Zumba Gold class is planned to begin 6 April, 10am at the Pennoyer Centre in Pulham Saint Mary. The address is; Station Road, Diss, Norfolk IP214QT.

It’s a very quaint building with a lovely adjoining cafe and is located only a short distance from Harleston! If anyone is interested in attending a “Zumba light” session in a wonderfully civilized setting, this is the class for you. Please contact me if you are interested or know of anyone else who would like to attend.

2016 classes to start 18th January

Off to workWith this being the last week of classes for 2015 – and following my previous post regarding the holiday schedules – I thought I would give you a quick update: 2016 classes will resume the week starting Monday 18th January.

So whether it’s Zumba, Aqua Zumba or Belly Dancing I look forward to seeing you then!

Tasty Chocolate Brownie recipe – wickedly good for you!

This Tasty Chocolate Brownie recipe was from You magazine, published with the Daily Mail. I did make some changes, like substituting regular organic milk for almond milk and using ¼ tsp almond extract. I also substituted 1/2 tsp vanilla extract for the vanilla seeds. For variation, when cooled - try icing with chocolate icing and topping with halved walnuts. Wicked!!!!

BrowniesIngredients

  • Oil for greasing
  • 75g (3oz) oats
  • 200g (7oz) dried dates, pitted
  • 125g (4 ½ oz) unsalted butter, melted
  • 75g (3oz) unsweetened cocoa powder
  • 5 tbsp unsweetened almond milk
  • 2 free range eggs
  • 1 tsp baking powder
  • Seeds from 1 vanilla pod

Method

  1. Preheat oven to 180c (fan 160c) 350f, gas mark 4.
  2. Grease and line an 18cm (7in) square baking tin with parchment/wax paper and set aside.
  3. Put the oats in a food processor and blitz until they become a powder or fine flour. Add dates, butter, cocoa powder, milk, eggs, baking powder and vanilla seeds and process until the mixture is smooth and fudgy. 
  4. Spoon the brownie mix into the baking tin smoothing the top evenly with the back of a spoon.
  5. Bake 12-15 minutes until firm on top but a little soft in centre
  6. Once cooked, remove from oven and leave to cool. Cut into nine squares and serve.

Food for thought and fitness – Zumba Eileen’s new recipe page kicks off with the delicious Beetroot Burger

After many requests I have decided to set up a recipe page and share with you some of my favourite foodie finds that are to only good for you but which taste divine too! Here is a Beetroot Burger recipe - I discovered this in the Daily Mail. The first time I made it EXACTLY like the recipe. It will make 4 patties.

The second time I made the burgers, I tripled the recipe and left out the cannallini beans, added 2 more eggs, more bread crumbs, and feta cheese. I did not sauté the onions and spices, first. In that case it’s better to use ground cumin and garlic powder. It made 9-10 nicely sized burger patties.

The texture should be like minced meat - if not add more binding ingredients. I’ve found the combination of cumin and nigella gives it a meaty-like flavour. Don’t leave either spice out!

Beet root burger pattiesIngredients

  • 2 large whole beetroots, RAW and grated
  • 1- 400g tin of cannallini beans blended to a paste
  • 100g breadcrumbs (I used dry and not fresh)
  • 1 onion finely diced
  • 1 clove of garlic, crushed 
  • Handful of fresh parsley, chopped
  • 1 tsp chilli flakes 
  • 1 tsp cumin seeds 
  • 1 tsp nigella seeds 
  • Olive oil or any oil of your choosing

Method

  1. Add onion and garlic to a hot pan of oil and soften for 5 minutes
  2. Add Nigella seeds, cumin, parsley and chilli and cook for a further few minutes.
  3. Add beetroot, breadcrumbs, beans, egg, and onion mixture to a large bowl and mix with your hands.
  4. Form into four round patties and leave in the fridge for an hour.
  5. Brush patties with oil and grill for 10 minutes on each side.
